Delicious Rockfish Recipe
Baked Rockfish with Lemon and Herbs
Method: Preheat oven to 400°F (200°C). Take a baking dish and lay your rockfish fillets down, and drizzle olive oil over top of fillets. Take your minced garlic, your chopped parsley, fresh lemon juice and sprinkle over the fillets. Add just a pinch of salt and pepper. You can use as much or as little of the listed depending on your taste preferences. Bake for 15-20 minutes, your rockfish should be flaky and cooked through.
Grilled Rockfish Tacos
Method: Your rockfish fillets should be marinated in lime juice, chili powder, a lil cumin and garlic for about 1/2 an hour. On a preheated grill or stove top grill pan lightly char rockfish fillets until cooked through. Flake the rockfish and place a little in the middle of a warm tortilla. Top w. some shredded cabbage, avocado diced and jazz it up with a tangy lime crema.
Rockfish Cakes with Remoulade Sauce
Method: In a bowl take some flaked rockfish, bread crumbs, just a scant amount beaten egg, a lil minced onion and a touch of Dijon mustard. Mix and form little patties. Pan fry them about 1/4 inch in oil until golden brown both sides. Serve these delights with a creamy remoulade sauce. Take a little mayonnaise, lemon juice, Dijon mustard and chopped parsley and mix.
Blackened Rockfish with Mango Salsa
Method: Rub rockfish fillets with a jazzed up mixture of paprika, chili powder, garlic powder and cayenne pepper. In a hot skillet lightly sear until cooked through and blackened. The rockfish should not be burnt in any way. Take a known Salvadoran specialty of Mango salsa, just a touch of what you are familiar with. Dice fresh mangos, add chopped red onions, some cilantro, lime juice and just a pinch of salt.
Rockfish Ceviche
Method: Grab up some fresh rockfish, dice along with fresh lime juice, some diced red onion, chopped cilantro, diced tomatoes and allow to marinate in the refrigerator for at least 30 minutes in order for the lime juice to “cook” the fish. Serve it right over some tortilla chips or if you please, on a bed of feel good mesclun mix.
